The fastest soup in the world

 A few days ago I cooked a green leaf & pea soup. I think this was my fastest cooked soup ever. And most importantly – healthy and tasty! Try yourself (I used only half of everything):

Green leaf & pea soup / serves 6-8 / cooking 10min preparing 10min or less :)

  • 1L vegetable or chicken stock
  • 6 spring onions, trimmed, sliced
  • 4 garlic cloves, crushed
  • 450g peas (fresh or frozen)
  • 250g watercress, rocket or spinich (or a mixture of all three) roughtly chopped
  • 200ml pure (thin) cream

Melt butter in a soucepan. Add spring onion and garlic, cook for 1 min. Add stock, add salt and paper, then bring to the boil. Boil for about 4 min or until the onion is soft. Add the peas, then cover and return to the boil over high heat. Uncover and boil for 1 min. Add the chopped greens and boil for 1-2 min until the peas and leaves are just tender. Add the cream and blend immediately. Season to taste and serve. Enjoy!!
